Rib Eye – Maria’s Favourite Cut

The Rib Eye cut is loved by many and given different nicknames in all different parts of the world, like ribloin, ribeye roll or even cube roll.

Where is the Rib Eye cut located? 

The Rib Eye is cut from the front end of the longissimus dorsi muscle (a pair of long, tender muscles, outside the ribs, all the way from the neck to the hip). The lesser work done by a muscle, the more tender the steak is. So, as a comparatively unused muscle, the Rib Eye is very tender, making it a perfect choice for steak.

What does it taste like? 

Did you know that the Rib Eye consists of two parts? The Central Eye and The Rib Eye Cap.

The Central Eye tends to be smooth-textured, with a finer grain than a strip steak. The Rib Eye Cap typically has a looser grain and more fat; this tiny crescent of tender meat is so rich, buttery and juicy, it may become your favorite part of the ribeye.

The Rib Eye cut is a high-grade meat with plenty of marbling. It gets its distinctive beef flavour from the large chunk of fat separating the Central Eye from the Rib Eye Cap.
